**Too easy!

(1) Open the "broiler" portion of your oven. Put it on BROIL. 

(2) You have 16 slices of Bread (Rhye, Wheat, Sourdough, whatever) set
aside on a saucer. You took the "ends" off the bread. (*I use Wheat).

(2) Take 2 seeded Egg Plants and cut them lengthwise. Make medium
"french fry" type wedges.

(3) Slice 2 Red Bell Peppers into thin "strips."

(4) Take a cookie sheet....put the Egg Plants and the Bell Peppers on
the cookie sheet and sprinkle some Celery Salt and Pepper on them.
(**You can also use your own favorite seasoning ie. Lawry's or
whatever, but I sprinkle w/Celery Salt & Pepper).

(5) BROIL those for about 7 to 10 minutes. They should be tender and
slightly twinged, maybe browning...but NOT brown.

(6) Take two slices of bread...on one slice, smear Soft Goat Cheese,
then add a Greek Spread called "Tapenade" (these are easy to find
at the Supermarket). Put some Egg Plant and Bell Pepper on there,
covering that slice. Sprinkle Parmesan Cheese on top. Put the
other slice of bread on top. YOU NOW HAVE A SANDWICH.

(7) NOW...cut that sandwich into 6 finger sandwiches, an "horderve".

**SERVE ON A PLATTER...can be hot or cold, doesn't matter. People
